A Vinification Tank is a technically complex piece of equipment made of stainless steel that is used for the pumping of grape juice and wine. In order to ensure that the vinification process is gradual and effective, tanks maintain a prescribed temperature. The so-called «cooling-sleeves» are used in tanks for the constant cooling of juice and wine.

We use modern pneumatic presses made by Bucher Vaslin for high-quality pressing of white grapes.
We pay special attention to the process of filtration of our products; we filter our wines twice. On its way to the bottling line, the wine goes through a MAC10 Spadoni macrofilter that stalls elements larger than 20 microns. Thanks to the «soft» process of filtration, the wine is neither shaken nor injured.
After the primary process of filtration, the wine goes through a DMS053BVD440 microfilter for a final filtration. Three-step technology allows the filter to catch the particles from 3 to 0.65 microns. Therefore, our wine is filtered on a biological level prior to bottling, preserving its aroma and taste at the same time.
All of the filters are produced in Italy; they are best in their class. Our filtration system is made of stainless steel.
Starting from the process of cooling of grape juice and until the bottling of wine, pumps are used to transfer wines from tanks to casks and from casks to filters. Pumping is a very important procedure that requires the highest-quality technology. We use an Italian-made oil-free flowing CSF A LOBI B215-3200 machine that is able to pump over 10 thousand litres per hour. A flowing pump ensures minimum impact on wine. The speed of pumping through filters and into the bottling line is controlled via a special sensor that is connected to the pump. The housing of the pump is made of stainless steel.
Our high-pressure tanks and high-tech fermentation tanks were designed by Donato Lanati and produced by the famous Italian producer Gortani.
Maintaining the correct temperature levels at all stages of production is a vital task for our specialists. Every type of wine requires a specific temperature level, which is different for white and for red wines.
Wine is cooled by European-made «chillers» with control systems that are adjacent to the «sleeve» of stainless steel tanks or on the frame of the oak barrels.
We use automatic compressors that are capable of both cooling and heating in order to maintain the necessary temperature within the cantine itself, specifically where tanks and oak barrels are placed. The given systems are used during processes of fermentation of wine and its aging in bottles. Temperature levels are set using the control system.
