Dora Marchi
Dora Marcchi has worked alongside Donato Lanati for almost 20 years, holding the position of the technical director at Enosis Meraviglia.
She started her career in the world of enology in Tuscany, and became one of the world’s leading experts in molecular and biochemical winemaking processes. She has lectured on the science of winemaking for many years at the University of Turin.
Together with Donato Lanati, they co-authored «Wine: lections on enology» that became a classical guide for the contemporary generation of Italy's enologists. Dora is an active member of the Commission for Enology at the International Organization of Vine and Wine. Dora Marcchi's research mainly concentrates on rosé wines and Pinot Noir.
Daniele Gilberti
Daniele Gilberti is a graduate of the University of Piacenza, where he specialized in the physiology and genetic modification of plants. Daniele travels frequently, particularly in France and South America, and has a profound knowledge of European winemaking.
In the beginning of 1990s, Daniele developed a technology of “evolving cellar” that was highly praised by Dr. Lanati.
Daniele has widely expanded his knowledge and understanding of enosis during his career by travelling to many countries such as Croatia, Georgia, Romania and Kazakhstan. He provides clients of Enosis with innovative technologies of winemaking, and consults them on the technologies of wine cellars.
